Pancake Day is celebrated all around the world—a day where you can eat as many pancakes as you like without feeling guilty! Want to join in on the fun? Here’s a simple guide to making pancakes and enjoying the day to the fullest.
Ingredients
- 135g / 4¾oz plain flour
- 1 tsp baking powder
- ½ tsp salt
- 2 tbsp caster sugar
- 130ml / 4½ fl oz milk
- 1 large egg, lightly beaten
- 2 tbsp melted butter (allow to cool slightly), plus extra for cooking

Instructions
- In a large bowl, sift together the flour, baking powder, salt, and sugar. In a separate jug or bowl, lightly whisk the milk and egg together, then stir in the melted butter.
- Pour the wet mixture into the dry ingredients and mix with a fork until smooth. A few small lumps are fine—they’ll disappear as you stir. Let the batter rest for a few minutes.
- Heat a non-stick frying pan over medium heat and add a small amount of butter. When it melts, pour in a ladle of batter (or two if your pan is big enough for more than one pancake at a time). The batter may look thick, but that’s exactly how it should be.
- Cook for about 3 minutes, until bubbles appear on the surface and the edges start to firm up. Flip the pancake and cook for another 2 minutes until golden brown on both sides and about 1cm / ½in thick. If your pancakes brown too quickly, turn the heat down slightly for the next batch.
- Repeat until all the batter is used. You can keep pancakes warm in a low oven, but they taste best fresh from the pan.
- Serve with plenty of real maple syrup and a little extra butter if you like.
